Masala Vada/Paruppu Vadai

img_1305Being in Diwali day, our special recipe today is masala vada/paruppu vadai, a favorite Tamil Nadu special snack recipe that can fit for any special occasions.

In Tamil Nadu, this vada is the main snack on special occasions, anything that ranges from Marriage or a small family together.

If we need a traditional, healthy, as well as a snack that can be prepared quickly in a span of 30 minutes, this is the one for us. But we have to soak them overnight if we are pre-planning a snack time the next day.

Preparation time is more, cooking time is less yielding a healthy homemade snack for all age groups starting from toddlers.

Today, came to know one of the favorites of my little toddler.

Masala Vada/Paruppu Vadai/Vada

A famous Tamil Nadu cuisine snack recipe for all special occasions.

  • 2 cups Chick Peas White/Vadai Paruppu
  • 1/2 inch Cinnamon stick
  • 2 no cloves
  • 1 tsp Saunf/Perunciragam
  • 1 no Garlic
  • As per taste Salt
  • 2 no Big Onion
  • Coriander leaves
  • Curry leaves
  • 250 ml Vegetable Oil


  1. Soak the chick peas overnight.

  2. Add cinnamon stick, cloves, saunf/perunciragam, garlic, and salt to the mixer and coarse ground them for 20 seconds.

    Drain water from the chick peas. Add them to the mixer and grind it coarsely along with the above ones. Water should not be added to it. Only the soaked chick peas is enough to grind them.

  3. Chop the onion, coriander leaves, curry leaves finely.

    Add them to the grinded chick peas paste.

    Make small balls out of them and place them in a plate. This step is to make vada shaping easier.

  4. Add oil to a deep bottomed pan and heat it.

    When the oil is in medium heat, make vada shapes from the balls by slightly pressing them on our palm and add one by one to the oil.

    At a time, we can make 5 to 6 vadas based on the pan size and the amount of oil we are adding.

    Deep fry them in low to medium simmer.

    Flip them over once or twice in between.

    Once golden brown, remove them from the oil.

    Serve the Cripsy Masala Vada hot!

Recipe Notes

Chickpeas can be green or white. In Tamil Nadu, we will get it in the name of vadai paruppu which is the split ones of chick peas with outer skin removed. 

We can use vadai paruppu or green chickpeas, or white chickpeas, all three will gives the same traditional flavor.
