Egg roast is a spicy recipe which is a nice combo with non-veg lunch meal or can be combined with white rice as a main dish too. Everyone likes egg. Giving a spicy touch to the plain boiled egg in a matter of ten minutes will make a meal very appealing to eat.
This is just a matter of ten minutes recipe turning the plain egg into a spicy one, giving the feeling of the non-veg Sunday even on weekdays. Weekdays are the days where we will try to make recipes quickly. This egg roast will make a quick side dish for both veg and non-veg meals, and also will serve as a side dish for chapathi or dosa at dinner too.
This curry needs the basic ingredients, ginger-garlic paste, garam masala powder. If we prepare ginger-garlic paste during weekends and have garam masala powder in hand, we can turn bland eggs into a spicy one in a quick span of time.

Egg Roast / Muttai Masala
Spicy egg roast to serve as a side dish for white rice or chapathi.
- 3 no Eggs as per need
- 2 no Big Onions
- 1 no Tomato
- curry leaves
- coriander leaves garnishing
- 1 tsp Garam masala powder
- 1 tsp Ginger-Garlic paste 2:1 ratio
- 1 tsp Chilli powder
- Salt as per taste
- 1 tbsp Oil
Boil eggs and remove shells and cut in half.
Chop onions vertically and chop tomato.
In a pan, add 1 tbsp of oil and add onion and curry leaves.
Fry onion until translucent and add ginger-garlic paste and fry for 30 seconds.
Add chopped tomato and fry until tomato mixes well.
Add garam masala powder, chilli powder, and salt and fry for a minute.
Add half cup water to the mixture and cook for two minutes.
Then add cut eggs and mix slowly without breaking the cut eggs too much.
Garnish with coriander leaves.
Hot egg roast is ready to serve.
